What do you think of providing Furling Mainsail in Mast as an alternative for all the range.
I am not an expert but I think below might be pros and cons.

Disadvantages: weight, reduced total sail area
Advantages: no need to go to the roof (real single handed experience, no need a 2nd skipper), safer, easier, so more fun.
I hope you would make tests and analyses with mast furling to see if it can still sail and if doable you’d be able to put that...

I would be pleased if you would consider offering bunk beds in the foredeck cabin as an order option. When crew members have to share the forward cabin, it often gets very "cosy". This is not a problem with couples, of course, but often a challenge with charter guests who don't know each other. With bunk beds, everyone has their own space.

If you are travelling with a smaller crew, the bunk beds have another very good use, because...

Have you considered a center/ forward cockpit? Putting the skipper right there near the mast, reducing the complexity of sail handling, increasing safety as the crew can handle the lines without having to leave the center of the boat. A lot of added benefits to visibility, safety, reduced complexity of line handing, closers to the anchor, and safer in bad weather.

The Excess 11 is particularly suitable for electric propulsion. In my calculations I started from 2x Oceanvolt sail drive 10 Using Deep bleu battery 360V. 40.0 KWh 278 kg If we compare the weight of 2 Diesel engines with 2x 100 l fuel v.s. above electrical drive, then we get a weight saving of about 375 kg. The range of this electrical combination will approximately 60 NM. Would like to hear your response.

I’ve often wondered why catamarans aren’t built incorporating a rainwater catchment system?

Lead times are too long (and expensive) to order a new boat (especially since the abolition of the VAT advantage with a leasing/LOA scheme) and finding a second hand boat is a headache (with inevitable risks associated with the age and condition of a boat).... not to mention the uncertainty of any resale. So why not offer a long-term charter formula for new boats coming out of the yard?
